OK.

Repasse le PC en uefi: reboote sur Ubuntu, et depuis un terminal, tente un

sudo update-grub

L'entrée "Windows" devrait s'ajouter à GRUB. Il restera à tester si tout ça fonctionne.

Pourrais-tu nous proposer un nouveau rapport boot-info ?

Un Windows Legacy sur disque dos qui tourne en uefi, ça mérite d'être mis en mémoire, ne serait-ce que pour d'autres qui seraient confrontés à ce genre de situation. Et ça évitera de devoir palabrer avec tel ou tel qui prétendrait qu'on ne peut pas le faire.

J'ai fais partie des septiques pour Windows...

Édit;
Chez moi. Avec une clé de tests en GPT. Un Os installé en UEFI, puis réinstallation de Grub en Bios_Legacy. Il démarre dans les deux modes Bios_Legacy et UEFI.
Il y a sur le SSD interne de la machine, en MSDos,un Windows7, un Ubuntu 14.04 en 32 bits, un Ubuntu 18.04 que j'arrive à lancer en mode UEFI depuis la clé de tests à partir du Grub de L'Os (après une maj de grub) démarré en UEFI. Je savais que l'on pouvait démarrer les Linux dans les deux modes, même les 32 bits. Mais pas mon Windows 7.

Lors des manips proposées par ikewdu, j'ai démarré la machine sur Windows 7, branché la clé de tests, elle n'est même pas vue, je ne peux donc pas tester le lancement de mon Windows installé en Bios_Legacy, via l'UEFI de la clé de tests.

Si si, elle est vue dans le gestionnaire des disques. Plus-tard, à mon retour, je vais tester la manip...

La clé de tests (60 Go) est vu comme disk 1,  la partition efi est la partition 1;

J'ai découvert Ubuntu avec la 07.10.... Et alors?!...  Depuis je regarde de temps en temps si Windows marche toujours....

Vous voudrez peut-être re-essayer après avoir créé une partition /boot/efi (FAT32, 100MB~250MB, en début de disque, drapeau boot). Cela peut être réalisé via des outils tels que gParted. Puis sélectionnez cette partition via l'option [Partition /boot/efi séparée :] de [Boot-Repair].

Si votre ordinateur redémarre directement sur Windows, essayez de changer l'ordre de démarrage dans votre BIOS.
Si votre BIOS ne permet pas de changer l'ordre de démarrage, changez l'entrée de démarrage par défaut de l'amorceur Windows.
Par exemple, vous pouvez démarrer Windows, puis saisir la commande suivante dans une invite de commande en mode administrateur :

J'ai un problème similaire. Win10 fraîchement installé, puis installation de Ubuntu Studio et impossible d'accéder à Win10...
J'ai l'impression que je devrais tenter de réparer le MBR mais je ne comprends pas comment lancer la session live en bios_legacy.

Bonjour,
Ton boot-info montre qu'en standard, cela boote en legacy et la réparation legacy est prévue. Donc
1) Boote avec le support d'installation et vérifie que tu n'as pas booté en EFI avec cette commande

[ -d /sys/firmware/efi ] && echo "Session EFI" || echo "Session non-EFI"

2) Lance gparted.
3) Mets le drapeau bios_grub sur la partition sdb1( Celle qui a actuellement le drapeau esp)
4) Installe boot-repair
5) Fais la réparation recommandée.

Aller régler le bios pour faire booter en legacy. Probablemement quelques tatonnements.
